At the rate The Simpsons is going, the original cast members' voices will probably be replaced by that of their great-grandchildren.

Well, The Simpsons has already had to deal with recasting on some level - they replaced Russi Taylor (who died a few years ago) with Grey DeLisle, and they almost had to recast Mr. Burns et al. in 2015 before Harry Shearer un-quit. I do wonder how the show would fare without the lead actors - some of whom are certainly getting up there in years. Yeah, this is a weird situation here, because either 1) Roiland maintains rights/royalties to the show/characters or whatever and thus profits from Rick & Morty's continued existence 2) Roiland has no rights/royalties to the show/characters and the show can go on without its creator against its creator's will ...both of which are pretty straightforwardly awful situations! I don't know, clearly the right thing to do in this case is to cancel the show, or turn it into the multiverse equivalent of The Conners, right? But I guess it's too useful an IP to let die. Harrumph.
Keep in mind that Dan Harmon is also cocreator and part-time showrunner, so it's not like the show is going on completely unmoored from its founding. (Also keep in mind that Rick and Morty was already renewed, several years ago, through Season Ten, so Adult Swim is obligated to honor its terms of the contract and keep the series around even if it becomes inconvenient to do so - also known as the Drew Carey Show Principle.) (Also also keep in mind that the list of bad and immoral people who indirectly profit from the shows and movies we consume, even after they are cut loose from the productions themselves, is longer than Mr. Stealy's arm.)

Right, right, but this isn't like Steven Mnuchin making money off Seinfeld reruns, this is like if The Cosby Show was still on the air in 2023 but with Alex Desert playing the title character, which would be weird both in the creepy-CGI-Peter-Cushing way and in the it's-Cosby-in-2023 way.

W-ell, I wouldn't go that far - Rick and Morty as characters and pieces of IP aren't nearly as widely recognized and associated with Roiland as Cliff Huxtable was to Cosby, what with the former being animated and Roiland never physically appearing onscreen. You could theoretically replace the voices (there are no shortage of R&M imitators on the Internet, and surely at least one of them can get the voices pretty close), but then the question becomes how much the typical beats and rhythms of the show change, since Roiland's contributions to the persona of the series went well beyond vocal inflection.
(Incidentally, round of applause for the Alex Desert reference.)

I think I might be the only person on Earth who has warm feelings about Becker, so seeing him and Saverio Guerra (who has Buffy cred too!) continue to get work, on long-running and beloved comedy series, no less, is very cool IMO.
